Depends on where you are. Here in CNY @ 1100 - 1400 feet above sea level, combining is finished late October into November. Rye is our best option. It's not fussy about planting depth, will germinate with temperatures in 30s. If it's a real late fall and you don't see it come up it'll be there when the snow melts and will take off in the spring. Kill with 16-20 oz. glyphosate in the vegetative stage and nail your winter annuals at the same time. Seems to help supress some other weeds like Va. creeper and horsenettle. If you are in warmer area you will have many more options.
